There are only three knots one might need to know: The bow (presented here), the plastron (ascot) and the four-in-hand (what we know as the Windsor).
The difference is in the size and shape of the fabric itself and the disposition of the remaining ends -

I stand corrected... I must be thinking of the fact that
I was shown a lot of those ties to be long enough to go front to back
and possibly once again around the neck before you could even consider
starting on the Bow.
but I have seen more than a handful of different presentations of the longer Ties. -

Yup, but the knots remain the same.
Some of the crazy regency/romantic presentations (as in "Neckclothitania") are just variations on what to do with the leftover fabric.

Most of these are plastron knots and the rest are just passing one end over or under another.
